Currently, beer is the favorite drink of many people. Therefore, brewers are not standing still and are creating new beers, different in taste, strength and level of production technology. There was a time when the most popular beer in the world was ale, but eventually lager beer was being produced using a new process, which gave them the opportunity to be on the first place. Modern scholars believe that the yeast, which is now widely used for the production of lagers, were the efforts of people. The fact that during the Middle Ages beer was usually stored in cold places – in caves or in cellars. It had led to a yeast mutation. People had to develop a new technology that will compete with going concerns. Initially, breweries, which produced this beer, could have been built only outside the city walls, and breweries that worked using the old technology remained in the cities. But progress has taken its toll and lagers have gained popularity all over the world. And when in 1953 the brewer from New Zealand has invented a new technology that is called continuous fermentation, it was possible to reduce the brewing time, and productions, which competed with ale brewing, began to appear. Now lagers are presented by a variety of beer brands that are very different in taste. Common for these beer brands is only a bottom fermentation method. In this case, the yeast reaches to the bottom, forming a bottom fermentation beer. During fermentation that occurs at high temperatures, yeasts rise to the surface, forming a top fermentation beer. As for the differences between ales and lagers, the latter is less fragrant, because a small amount of volatile matter is formed at low temperatures.
